Abstract

This chapter covers the composition, properties, and applications of a biologically potent natural product, aniseed. The chapter deals with the active ingredients, their composition, and the chemical structure of aniseed essential oil. It elaborates on the traditional usage of aniseed and its oil, which ranges from treating digestive disorders to stomach cramps. Aniseed and its oil are also used as a flavouring agent, fragrance, and natural food preservative. Apart from describing the traditional usage, this chapter also covers the usage of aniseed and its essential oils in food science (as a preservative), agriculture (as an insecticide and poultry growth enhancer), and pharmaceuticals (as an antimicrobial, ovicidal, larvicidal, and anticonvulsant).
