Microscopic characterization of starch granules revealed the structural differences in native and physically modified starch granules. The changes in the morphological features increased with the increased dosage of gamma radiation. SHG microscopy revealed the alterations in the amylopectin chain according to the gamma exposure. Further, biochemical investigations to determine the amylose and amylopectin ratio would be helpful in classification of the native and gamma treated starches into high and low glycemic starches. 4.
