Sustainable gastronomy of street food in Kolkata: A netnographic approach

Abstract

Food is a fundamental aspect of an individual's daily life which also states the cultural heritage of a place. Gastronomy helps to offer an opportunity by generating benefits to promote the local economy of the community. The study was designed to find the gastronomic importance of a street in Kolkata with historic importance which provides gastronomic delights to people at an affordable price to its regular customers, most of whom are office goers and how the local community benefits. The study was conducted with a netnographic approach through online reviews posted by the customers about their food experience at a particular food outlet located on that street. The results of the study state that waste reduction, culture, local food, affordability, and portioning are key components of street food sustainability. The results of the study will help to conserve the food culture of street food and assist the local community and the chefs to create a better experience for the customers.
